This recipe is by far my families favourite tomato based recipe I made last year. It is a great way to use up the green tomatoes that fall off, and the end of seasons ones that don't ripen.
Green tomato relish
2.5kg green tomatoes, chopped
500g onions, finely sliced
4 teaspoons of salt
1 litre of malt vinegar
500g brown sugar
250g saltanas, chopped
3 teaspoons ground pepper
Finely slice the onions and tomatoes, pop them into a bowl and add the salt and stir, cover and leave overnight.
Place vinegar into large pot and add the brown sugar. Stir over medium heat until sugar has dissolved. Bring to the boil then add the saltanas, bring to a gentle boil.
Drain the tomatoes and onions, but don't rinse. Add to the relish and stir well. Add the white pepper.
Gently boil for 1.5 to 2 hours until thick and golden, stirring occasionally. Adjust the heat as needed.
